I would like to put together a coral color palette for an upcoming wedding. I am considering using Amsterdam or Classic Duett roses. I would like to put a paler peach in there as well which brings me to my question...will this work?

I think so. If you're worried about keeping the color palette at all costs you could consider using other coral flowers that are perfectly coral to accompany.... that way you will ensure that the bride gets what she wants even if the roses are a bit off-hue. Sometimes rose colaration can fluctuate....
